Spassorole

This is a quick and easy casserole that can be adjusted to what ingredients that you have on hand. I will give a list of what was used in my recipe and give suggestions for substitutions, and you can run with it.

The dish is basically an egg dish so it can be made to be “keto” friendly if you adjust just one ingredient. I used – ready for it – a can of Spam to provide the meat in this dish. I really wasn’t feeling like defrosting something and then dirtying several pans, just to make dinner especially after I had just done a thorough cleaning of my kitchen. So I decided to tap into my emergency stash (i.e. canned meat.) I always keep a variety of canned meat in the cupboard for cases such as this, or maybe I am running short on groceries or cash. This meat can be made to be more palatable with a little spices and the right complimenting ingredients.

Spam is a tried and true main stay from years ago. Here is a little history behind Spam. Spam actually stands for Special Processed American Meat. It was created in 1937 by Hormel and was used around the world during WWII and after. The meat consists of pork shoulder, ham, salt, water, sugar, potato starch, and sodium nitrate. It is not exactly healthy for you, but it is better than a hot dog and even some lunch meats. Another interesting fact, is that the Hawaiian population consumes more Spam that any other population in the world. If you would like some more interesting facts about Spam, check out FOODBEAST. Now on to the making of Spassorole

Ingredients:

  • 1 can of SPAM
  • 8 eggs
  • 1/2 cup of heavy whipping cream
  • kale (shred amount you are comfortable with or leave out)
  • spinach (shred amount you are comfortable with or leave out)
  • mushrooms (shred amount you are comfortable with or leave out)
  • shredded mozzarella (you can use your favorite cheese and the amount you like)
  • 1/4 tsp basil
  • 1/4 tsp ginger
  • 1/4 tsp parsley
  • 1/2 tsp garlic flakes
  • 1/4 tsp cumin
  • **modify the spices above to your liking, these are just suggested measurements.**

Baking dish of your choice, make sure you coat the dish with either a cooking spray, or whatever you normally coat your pans with to prevent the food from sticking. I used a glass baking dish that I bought from Amazon.

Directions:

  1. Fry up the Spam in a skillet – you do not need any kind of butter or oil; there is plenty in the meat. Fry it until it is at least heated through but you can cook it until it is to your liking.
  2. Mix all other ingredients (except cheese) together in a bowl until they are thoroughly combined.
  3. Place Spam in the bottom of the baking pan in an even layer.
  4. Put a layer of shredded cheese over the Spam.
  5. Pour the egg mixture over these two layers.
  6. Put another layer of shredded cheese on top.
  7. Cover pan with foil.
  8. Bake at 375° for about 30-35 minutes. Monitor to make sure that the egg part is completely cooked. Ovens will vary in temperature and cooking time.
  9. After egg is completely cooked, remove foil and place back in the over for a few minutes, just to brown the top.

Done! Serves just like a pie and is quick, easy, cheap, and filling.

Substitutions:

This recipe allows you to substitute or leave out ingredients you may not like or don’t have on hand.

  • You can also add in things you like such as: tomatoes, peppers, onions..etc. Just be aware that very juicy ingredients might make the dish a little runny and hard to tell if the egg part is done.
  • Heavier ingredients like, potatoes, sweet potatoes, carrots, zucchini might need more cooking time but it would be best to precook these until they are softened but not mushy. Simply because the eggs in the oven will not take enough time to cook to allow heavier ingredients to reach the desired edible texture. Resulting in burnt rubbery eggs and hard potatoes.
  • The Spam can also be replaced by whatever base you have available: turkey, ham, hamburger, cauliflower, rice…etc. (precook as necessary)
  • Finally, the spices that I put in mine, you may not have available or perhaps you don’t like the taste of them…so leave them out or replace them with spices that you prefer.
