The World of Me

Hello to All! My name is Cassandra and I have been working in the healthcare field for almost 30 years. have two children, one grown and the other a teenager. After dedicating most of my adult life to work, the need to reinvent myself was forced upon me. I thought I would try my hand at blogging. So forgive me if this site seems a bit simple at first, this is all new to me.

As a result of spending many years raising two kids on my own, and with one salary, so many times I needed to get creative in the kitchen. Either because time was short because I spent too long at work or maybe money was tight (happened a lot), but people still need to be fed and I felt like I was falling short as a parent if I just gave them soup or mac and cheese. Along with this I had dietary issues to deal with because my son has severe acid reflux and IBS. Honestly, I fell short with these dietary issues for a long time, but then I started to pay attention to what triggered these events. Now the work began when it came to modifying recipes…no red sauce, no onions, nothing remotely spicy, nothing heavy in dairy…ugh, what could I possibly make? Then I happened across the keto diet, and used this as a guide. Amazingly, after one week, he quit eating nexium like it was candy and his IBS became less and less. He also began to loss weight without even trying. Now this is not a keto site, I just use the basics of this type of diet as a guide. Mostly removing bread, pasta, sugar, breaded foods and milk. Most of all NO fast foods and this has even morphed into very little eating out, even in sit down restaurants. I don’t know if it was the preservatives they use or oils they cook things in, but even restaurant food would make him feel like garbage. On a side note, not eating fast food for even just a little while has a really weird effect, once we quit eating it…it now tastes awful and makes my daughter and I feel tired and sluggish along with the stomach issues that follow. So bye bye fast food for us.

Because I have been told that I am a pretty good cook and I seem to be able to find my way around the kitchen pretty easily, when trying to find another way that I could help people, this seemed like the logical alternative. After looking at many different blogs, I realized that I was good at modifying and substituting ingredients in recipes and they worked out quite well. My goal is to present options to recipes, so when those days roll around when you just don’t have the energy or desire to work with a complicated recipe, but yet would like to make something different and not the same old repetitive dishes, this will be your go-to place for alternative ideas.

I hope I can make things a little more simple for someone along the way, allowing for healthier meals and more family time, relaxation time and especially peace of mind that you are doing what you can to keep your family healthy.

This blog is for those normal everyday cookers who don’t really fit into the fancy-smancy hard to find ingredient type recipes, or those who just don’t have the time to make those types of recipes. I will be posting recipes that I have found and modified, recipes that I have thrown together throughout the years, and I will have a section that will give a little history about something in the recipe, just for fun!
