Cauliflower Pizza Crust

Pizza has been a favorite in many homes, mine included. Unfortunately, it is full of carbs and gluten and for those who are either on a diet or have a sensitivity to gluten, this can be one of those love it-hate it type of relationships.

The biggest culprit is the crust, so I set off to find the best alternatives. Cauliflower crust is somewhat simple to make, especially if you chose to go to the freezer section in the grocery store, or their is always the Amazon world of cauliflower crust.

This particular crust is very good and does hold up with quite a few topping piled on it.

After using the store bought kind several times, I wanted to try my hand at making this crust from scratch.

Thanks to the efforts of Gail Becker, she gambled everything on her concept of a pizza with a cauliflower-based crust. I send many thanks to her for presenting this type of crust, it has brought pizza back into my home.

Now, I cannot say that it was an easy process but it definitely was not the hardest cooking task that I have tried. The worst part, is that it is a bit time consuming because of the multiple steps and waiting times. However, if you take the time and make several crusts at one time, then you can freeze them and save time later on.

Items needed:

Ingredients:

  • 1 head of cauliflower
  • 1 egg
  • 1.2 cup shredded cheese
  • 1tbsp garlic salt
  • 1/2 tsp oregano
  • 1/4 cup Parmesan cheese
  • 1/2 tsp salt

Directions:

  1. cube the head of cauliflower and place in food processor to create a cauliflower rice consistency
  2. Take a baking sheet and line with parchment paper
  3. Lay the cauliflower rice out in an even layer on the parchment paper
  4. Preheat oven to 350 degrees
  5. Place the baking sheet in the oven for about 20-25 minutes or until the cauliflower rice begins to brown
  6. Remove the baking sheet and allow the cauliflower to cool
  7. Spoon the rice mixture into cheesecloth and squeeze as much of the moisture out as possible. You will be amazed at how much liquid is still present even after roasting.
  8. Place the rice and the rest of the ingredients in a mixing bowl and combine until you have a dough like consistency
  9. Shape the dough into a round pizza shape or if you like you can make a few smaller, single serve pizza crusts. Do this on a baking sheet lined with parchment paper
  10. Place the baking sheet back into the oven for around 15-20 minutes or until it is solid and browned to your liking
  11. Remove from oven and either allow to cool and store away for later or top with your favorite toppings and return to the oven until the cheese is melted (generally less than 10 minutes)

Substitutions:

You can add whatever spices you would like to the crust. I would suggest adding something, whether it be garlic, oregano like above, simply because it does taste a great deal like cauliflower if left to its own devises. You could even try something a little more spicy like cayenne pepper or cajun seasoning if you like. These spices will change the taste of the crust, so be aware of the toppings that you use, just to make sure that they will mix well together.
