This next recipe was based off of one that I found on Pinterest (favorite site). The site for the original recipe is on instrupix.
I would have loved to try the recipe as it was originally posted, but I have a son who cannot eat spicy food or onions so I definitely had to modify this one. First the cajun style andouille smoked sausage had to go, onions–see ya, and cajun spice-well just a pinch.
First lets take a look at the Cajun versus Creole food genres. Many people believe these are the same and the words are interchangeable. Guess what, they are actually two very different styles of food. Cajun (Louisiana French or Acadian) were the more rural folk and the Creole (mixed ethnic groups- West Africans and Europeans, South Asians or Native Americans), also mixing was known as Creolisation. These were the more urban people.
Now both of these types of food are native to Louisiana. Creole food usually uses tomatoes and tomato based sauce in their dishes where Cajun food tends to use more onions, celery, and bell peppers, “the holy trinity of Cajun Cuisine”, and a more than ample helping of cayenne pepper. They also use many spices such as paprika, thyme, and parsley. So basically, if it has a tomato base it is most likely Creole or “city food” and if it has more of a vegetable base and is heavily spiced, it is more likely to be Cajun or “country food”. So now that that is cleared up, on to the recipe.
Ingredients:
- 1/2 head of cauliflower
- 1/2 package smoked sausage
- shredded carrots (add the amount that you like)
- 1 green bell pepper
- 1 clove of garlic
- 1 avocado
- 2tbsp of olive oil
- 1/2 onion flakes
- 1/4 tsp paprika
- 1/4 tsp turmeric
- 1/4 tsp ginger
- Cajun Seasoning (I used just a pinch for flavor)
- 1/4 tsp basil
Directions:
- Heat olive oil in a skillet (Mirro A7979784 Get A Grip Nonstick Fry Pan with Glass Lid Cookware, 10-Inch, Black) and add diced green bell pepper, garlic, shredded carrots, and cauliflower (finely chopped, like rice). Cook until everything is heated through and begins to soften.
- Add onion flakes, paprika, turmeric, ginger, cajun seasoning, basil, and smoked sausage. Lower the heat and cook until everything is thoroughly heated and the sausage is cooked completely. Be careful not to cook it too long, or the vegetables will become mushy.
- Place rice in bowls and place avocado slices on top
Done, now enjoy. There is still the flavor without the spicy bite.
Substitutions:
- The Sausage can be replaced with whatever you like. Heck, if you just have hot dogs those would work too.
- The spices can be left out or you could even add more if you want more of a bite, or if you like the taste of turmeric or ginger then add a bit more. I know I was supposed to completely get rid of the cajun seasoning, but I just couldn’t resist (literally just a pinch) and no one even noticed any kind of spicy burn to the dish. I used dried onion flakes to get the seasoning from the onions without causing acid reflux problems for my son.
- The avocado can be left off or you could use something else like; tomato slices, pineapple slices or whatever you think would be good. Be creative.
